Using your slow cooker during the spring and summer months helps prevent you from heating your house up with the oven. Keep that in mind as I share with you a chicken and artichoke wrap recipe.
I had to read up on artichokes because I’ve never liked them, unless, of course, they were in some type of dip. In dips, I never really tasted the artichoke with all of the other ingredients like cream cheese that over-powered the artichokes.
With that said, I learned that artichokes aid with digestion problems, lower cholesterol levels, help with gall bladder function and assist in the treatment of irritable bowel syndrome. Who knew?
So despite my lack of love for this vegetable, the flavoring of this dish was rich and delicious. My husband is the one who discovered this recipe in one of his Paleo cookbooks and he altered it to our liking; the aroma alone from the ingredients was delightful.
I was a little thrown off by using the Romaine lettuce leaves as wraps at first, but it works. Using Romaine adds to the richness of the dish.
This recipe really is a win-win situation. It’s easy to put together. The slow cooker is convenient. And the best part is, this meal is healthy.
Chicken and artichoke wraps
Four chicken breasts, boneless and skinless
One large carrot, chopped
6-ounce jar of artichoke hearts packed in oil, drained
Half an onion, chopped
2 tablespoons pure olive oil
1 tablespoon of lemon juice
1 head of Romaine lettuce
In a bowl, combine the olive oil, onion, carrots and lemon juice.
Place the chicken and artichoke in the slow cooker and pour the olive oil mixture on top of the chicken.
Cook on low for 6 to 8 hours.
Shred the chicken with a fork.
Wash and dry the Romaine leaves and place desired amounts of chicken and artichoke onto the Romaine.
Roll it up and secure the roll with a toothpick.
Tip: The chicken does not have to be thawed; it can be frozen when placing it into the slow cooker.
