THE RECIPE BOX: Use your Girl Scout cookies for Thin Mints Cupcakes

As long as Hightower Trail Elementary School fifth-grader Katie Jones has been selling Girl Scout cookies, I’ve made it a point to make sure I purchase my first box of cookies from her. And those first boxes are always Thin Mints, without a doubt.

So when I ran across a recipe for Thin Mint cupcakes — today’s featured recipe — I hesitated even trying this recipe out. After all, how does the old saying go — “If it ain’t broke, don’t fix it.” The same rule applies to certain foods and recipes. For me, the above rule applies to Thin Mints.

The recipe is rather easy to follow, and with St. Patrick’s Day just around the corner, I thought that now was a good time to try out a new minty green recipe.

In case you have not tried Duncan Hines’ new line of Frosting Creation Flavor Mixes, I would recommend that you do. I looked up several recipes on how to make a mint flavored frosting, and I was leery of them. Most of the recipes called for food coloring, and I didn’t want my teeth to turn green.

While on the cake isle at the store, I discovered a mint chocolate flavor mix, and I gave it a whirl.

Using the icing flavor mix and creamy vanilla frosting was just the right hint of mint. What I did not want in a minty flavored icing was anything that would overpower the already great flavor of the cookie.

Before pouring the cake mix into the cupcake liners, place a whole Thin Mint cookie into the bottom of the liner. It turns out to be a nice little surprise on the bottom of the cupcake.

Here’s a fun fact I found: Thin Mints account for 25 percent of Girl Scout cookie sales. I’m definitely part of that 25 percent.


Thin Mint Cupcakes

• One box of Pillsbury Moist Supreme Devil’s Food Cake Mix

• One 16-ounce container of creamy vanilla frosting

• One package of Duncan Hines Frosting Creation Flavor Mix, Mint Chocolate

• One box of Girl Scout Thin Mint cookies

Follow the directions on the cake mix as to how to mix and bake the cupcakes.

Prepare your cupcake liners with non-stick spray and lay one Thin Mint in each liner.

Fill the cupcake liners about ¾ full and bake according the directions on the package.

Follow the directions on the back of the icing flavor mix as how to prepare the icing.

Allow the cupcakes to cool completely before icing them.

Tip: Garnish with a half cookie, or with crushed cookie crumbs.
