I’ll be honest, I was a little nervous about trying out today’s recipe — frozen banana bites.
Frozen banana bites, one of its many names, are best described like this: peanut butter sandwiched between two slices of bananas, dipped in dark chocolate and then frozen.
I hesitated about tasting this recipe because of the banana and peanut butter combination. Some folks love a banana and peanut butter sandwich. But I don’t. If I’m going to eat a banana sandwich, its gonna be with mayonnaise, banana and bread.
But to each his own. If we all liked the same exact things to eat, we’d all get bored pretty quickly.
So, after a lot of hemming and hawing, I bit into one of these frozen bites and now I have to retract my above statements. I now like the banana and peanut butter combo — as long as it is covered in dark chocolate.
If there is someone in your family who cannot have peanut butter, he doesn’t have to miss out on this treat. Just make the person chocolate-covered bananas bites, minus the peanut butter.
Some alternatives as far as the ingredients are concerned include swapping out the dark chocolate for milk chocolate and replacing the peanut butter with almond butter.
I also suggest placing the bananas in the freezer for about 10 minutes before dipping them in the chocolate. Bananas tend to get mushy if you work with them too long.
Frozen banana bites
Two to three bananas
½ cup of peanut butter
8 ounces of dark or milk chocolate
Slice the bananas to desired thickness.
Spread peanut butter between slices, and sandwich them together.
Place banana bites on a cookie sheet covered with wax paper.
Put the cookie sheet of banana bites in the freezer for about 10 minutes.
Remove the banana bites from freezer, and dip them into melted chocolate, following the instructions on package on how to melt the chocolate.
Place bites back on wax-covered baking sheet, and put in freezer for one to two hours.
Tip: Topping off frozen banana bites with crushed nuts or coconut adds additional flavor.
