A couple of weekends ago, I got a text from my friends Lori and Chris with a picture message of what was obliviously their breakfast. I thought maybe they were at a restaurant, but no, it was just something Lori had whipped up in the kitchen one Saturday morning.
The picture message was of eggs in a bacon basket. Really? Eggs in a bacon basket? Who comes up with this stuff? It is great way to serve bacon and eggs for breakfast (or dinner) but just in a different way.
So while I was drooling over the picture, because I believe I only had yogurt for breakfast that particular morning, I knew I wanted to run this recipe the weekend before Christmas.
What could be more fun to serve as Christmas breakfast for the kids or, maybe even the grownups?
For those concerned with portions, each basket only contains one egg and two and a half pieces of bacon. The baskets are formed by placing them in a muffin tin, so the breakfast baskets aren’t very large.
We’ve run several other egg recipes that are cooked in muffin tins before, but I really like this one the best because the eggs aren’t scrambled. But, if you prefer your eggs scrambled, feel free to scramble them before adding them to a bacon basket.
Serve the baskets with some whole wheat toast and fresh fruit and enjoy celebrating the real reason for the season, the birth of Jesus. Merry Christmas!
Eggs in bacon baskets
Green Onion, chopped fine
Preheat the oven to 400 degrees.
Partially cook the bacon in skillet to render off some fat. (Do not cook the bacon until crispy, the bacon will finish cooking in oven.)
Line the muffin tins with the partially cooked bacon, using two and half slices per muffin hole and putting the half slice on the bottom of each hole to make the “basket.”
Crack open an egg into each bacon lined basket.
Add salt, pepper and some chopped green onion.
Bake 15 minutes in the oven, or until eggs are cooked with a runny yolk.
Tip: Beat the eggs before adding them to the bacon baskets with favorite omelet toppings — mushrooms, salsa, spinach — then top with cheese.
