Thanksgiving has passed, you’ve stuffed yourself silly and you just couldn’t possibly think about eating one more bite of stuffing, until Christmas that is.

What you are looking for are some really good and healthy recipes. Today’s recipe — roasted vegetables — might do the trick.

Although there is nothing in the world like eating vegetables straight from the garden, this time of the year a bag of frozen ones will have to do. Add a little dry zesty Italian dressing mix for some special seasoning to the vegetables and bake them for about 30 minutes.

While the vegetables are baking, fix the rest of your dinner and then you’re done.

‘Tis the season to be busy, and this is another reason I chose this dish. What could be easier that sprinkling some seasonings on some vegetables and popping them in the oven?

I personally liked the squash and zucchini mixture of vegetables the best, but cook what your family likes.
