THE RECIPE BOX: Beary breakfast a playful, nutritious start to the day

In keeping with our back-to-school recipe theme for the month of August, this week’s recipe is sure to be pleasing to the eyes, as well as the taste buds — for the kids at least.

My daughter, Joy, gave me a funny look as I set a piece of cinnamon toast in front of her this week. Her cinnamon toast came topped with two ears, two eyes and a nose. The toast looked like a bear’s face — it’s a beary breakfast.

She did, of course, what any other 16-month-old would do — she ate the bananas pieces, gave the raisins back to me and nibbled on the cinnamon toast.

If your child isn’t a fan of cinnamon, you can substitute brown sugar instead, or maybe even try some jam. If raisins aren’t your child’s favorite food either, use chocolate chips, or even blueberries. The ingredients for this recipe definitely can be changed to your child’s liking.

Joy probably won’t appreciate my “food-art” until she is older, but maybe one of your school-aged children might like having a beary breakfast before catching this bus this week.

Beary breakfast

One banana

Two slices of bread, white or wheat

butter, softened

raisins

cinnamon

sugar

Place the bread on a baking sheet.

Spread the butter on each piece of bread evenly.

Sprinkle desired amounts of cinnamon and sugar on top of the bread.

Toast in the oven until lightly browned.

While the toast is in the oven, cut up the banana into slices. Use at least three slices for each piece of bread.

After the toast is done, remove from cookie sheet and allow it to cool off for a few minutes.

Place a banana slice in the upper left hand corner and the upper right hand corner. Place the third banana slice in the lower middle part of the bread.

Place two raisins above the center banana slice and one raisin on top of the middle banana slice.

Tip: English muffins and bagels can be substituted in place of bread.
