My husband Kevin and I both had heard of people substituting cauliflower for potatoes in their mashed potato recipe.

At first, I wondered who would do such a thing? That is absurd. Mashed potatoes are mashed potatoes -- that's a good old fashioned dish that shouldn't be messed with.

But the idea eventually wore on me, so we decided to give it a try. I just kept telling myself that even though it looked like mashed potatoes, it wasn't going to taste like it. It's all in the mind right?

I researched online several different recipes and among all of those recipes were a lot of comments. People added in their suggestions, what they would or wouldn't do next time, and how they would add or not add certain ingredients.

I read stories of moms "tricking" their families by placing a big bowl of smashed cauliflower on the table instead of the normal loaded mashed potato side dish. It appeared that most people were pleasantly surprised with the dish.

It seems that someone, in need of a low-carb recipe, came up with the idea. By replacing the cauliflower in the recipe, you take out the majority of the carbohydrates in your dish.

I saw several different versions of this recipe on some diabetic sites and low-carb sites, as well.

Try this recipe out, and see how you like it. Kevin whipped up a fairly basic recipe, but feel free to add to it. Some recipes suggested using fresh garlic cloves, paprika and chives. Also, instead of cream cheese, use sour cream or Greek yogurt.

I have to say, I can't wait to have smashed cauliflower again.
