Chicken melt sandwich
Start to finish: 5 to 10 minutes, all active time.
One small can of chicken, drained
Three slices of mild cheddar cheese
Two slices of sourdough bread
1 tablespoon of ranch dressing
Butter
Three or four slices of bacon, cooked (optional)
Butter one side of two pieces of bread.
Heat the chicken in the microwave for 30 seconds.
Lay one slice of bread butter-side down in a pan heated medium to high.
Place the cheese on the bread.
Add the chicken.
Add the ranch dressing.
Add bacon, if desired.
Top with the other slice of bread with the butter-side facing up.
Grill until the cheese is melted and the bread is browned on both sides.
Tip: Use one chicken breast, cooked and chopped into small pieces instead of the canned chicken. The canned chicken comes in handy when you are in a hurry or you don't want to bother with cooking the chicken.
