Are you tired of just eating plain old macaroni and cheese? If so, you might want to stir up this cheesy version of mac-n-cheese.
I received this recipe from a friend of mine, Jessica Frankfort. If you've visited the Citizen anytime over the years, then you've probably met her smiling face. She was our receptionist for a couple of years until her husband's job called for them to make a big move overseas.
The first time I tried this recipe was at a company function. Jessica brought this dish and everyone was raving over it. It doesn't take long to whip up. I'm all about a fast and easy dish, and it has a fantastic flavor.
Jessica would offer up cooking ideas to me and I am thankful she did. She is quite the little hostess, as well.
This dish consists of noodles, cheese, mayonnaise, cream of chicken soup, more cheese, diced pimentos and onions, and did I mention cheese? And by the way, I'm not usually a fan of dishes with pimentos, but this one is too good to pass up.
My husband tried it the other night, and he loved it. I guess it helps that it has a pound of cheese in it.
It takes less than 30 minutes to bake, so while you've got the mac-n-cheese in the oven baking, make the rest of your dinner, too. With some barbecue chicken and a salad or some green beans, it makes a wonderful homemade meal.
