This recipe -- Veg-All pockets -- was created on a whim.
We bought some crescent rolls and had forgotten about them. I looked at the expiration date and it was quickly approaching. I looked up some different recipes and searched through my cookbooks.
Then I decided that I was just going to create something.
I was craving some chicken pot pie. Of course, we didn't have any chicken thawed out. So, I made up a version of the Veg-All casserole we've already featured and went from there.
This dish turned out to be a nice little surprise and it is pretty simple. Who doesn't like simple?
I would serve this up as the main dish, and eat it with some more veggies.
If you are thinking ahead, add cooked chicken to this recipe.
The most difficult thing about this might be trying to fill the crescent rolls with the VegAll mix and then pressing the sides together. But don't worry. I made all different shapes with mine, and there is nothing wrong with the pockets not all looking the same.
