THE RECIPE BOX: Freedom parfaits add to festive Fourth

What is fruity, creamy, sweet (but not too sweet) and has a graham cracker crust? A freedom parfait.

I had planned for months to feature a red, white and blue cookie pizza for the Fourth of July holiday. But I changed my mind at the last minute thanks to an inspired vacation Bible school snack we had a couple of weeks ago.

So let me set this delicious and not-too-guilty treat up for you.

It begins with a crumbled graham cracker bottom, then layering strawberries, vanilla yogurt, Cool Whip, blueberries and so forth. Layer the ingredients until you absolutely can't get anything else into your cup, and you've got yourself a delightful dessert -- one that is refreshing as well.

There is no wrong way to build this freedom parfait either -- so make it to your taste buds' likings.

As a matter of fact, if you are having a Fourth of July party, set up a parfait bar. Put all of the ingredients out and let everyone make their own.

The amounts I have listed in the ingredients should make six to eight freedom parfaits when using a four-ounce plastic cup. Obviously you can make more or less depending on the cup size or sundae cups you may already have at home. Again, you can't mess this up.
