After being snowed in this week, I bet you are looking forward to warmer weather. Although I can't make the temperature outside warmer, I can bring a little spring-like dish to your table.
The featured recipe this week is for barbecue ambrosia salad, and while the name of it made me wrinkle my nose the first time I heard it, after I tasted it, I changed my mind.
Let me also say that there is absolutely no barbecue in this dish, none whatsoever. It's nothing but fruit, sour cream and some marshmallows.
A former co-worker introduced me to this fruity salad and it has always been my fallback dish. Even a deep freeze doesn't stop me from fixing it.
I have also found that when I am trying to avoid eating a lot of sweets, especially when dieting, this recipe helps fill a sweet craving. Reaching for a small bowl of barbecue ambrosia salad instead of ice cream or chocolate satisfies that sweet tooth without as many calories.
We've fixed it and used it as a side dish and as a dessert.
