RECIPE BOX: Cabbage casserole a time-saver for busy moms

Cabbage casserole can be prepared in any size dish.

Cabbage casserole

Start to finish: 50 minutes (10 minutes active)

One head of cabbage

One sweet onion

One can of cream of celery soup

1 cups of mayonnaise

1 stacks of Ritz crackers

1 cups of shredded cheese

Preheat oven to 350 degrees. Cut up cabbage and onions. Mix cabbage and onions together in slightly greased casserole dish. Mix soup and mayonnaise. Pour soup/mayonnaise mixture over cabbage and onions.

Cover with foil. Bake for 40 minutes.

Crush Ritz crackers while cabbage is baking. Pour shredded cheese and crushed Ritz over baked cabbage mixture. Bake 5 additional minutes until cheese is melted.

Tips: Vary the mayo/soup mixture depending on your cabbage size. Also, add chopped bacon for more flavor.

We've all heard the old saying, "Southerners can make any dish into a casserole." Well, that is exactly what I thought when I heard about this cabbage casserole that my sister-in-law Stacy Ingram was making for our Christmas dinner this year.

I'll have to be honest -- I kind of already had it in my mind that I wouldn't like it, mainly because I'm not a big cabbage fan. But I've changed my mind since Christmas dinner.

Not only are we planning on making this delicious casserole at our house, but I've steamed up some cabbage at our house as a side dish. That's right, plain old cabbage -- my grandmother would be so proud.

Stacy got the recipe from her friend Cathy O'Dillon.

"Cathy made the dish for a senior group for their December meeting/covered dish at Tabernacle Baptist when the Joyful Messengers sang in early December. It was so yummy, I asked for the recipe and she shared it with me," said Stacy.

"The reason I wanted to make the recipe is that I love cabbage! It's one of my favorite vegetables and it only requires simple ingredients and preparation, which is great for busy moms."

I think she sums it up with her last sentence -- the ingredients are simple and so is the preparation. Plus, it is a great way to sneak in a vegetable that not many kids or even some adults like in the first place.

Stacy baked her casserole in a 9-by-13-inch dish, but the size of the dish really depends on the size of your head of cabbage.

So, compliments of my sweet sister-in-law Stacy and her friend Cathy enjoy. Try it, you might just love it!
