The following food service establishment inspection reports were provided by the Environmental Health Division of the Rockdale County Health Department and the Newton County Health Department. Restaurants that score from 90 to 100 get a letter grade A; those that rate 80-89 get a B; a tally of 70-79 is a C; and below 70 is a U, or unacceptable. A restaurant scoring 70 or above is allowed to operate if there are no critical violations. If a facility is rated U on consecutive inspections, it must close and the owner must prove that it can be operated safely before reopening is allowed.

Violations: Observed mold-like substance in ice maker. Prepared potentially hazardous food stored in cooler without date marking. Damaged fryer baskets still in use. Damaged door gasket seals on reach-in cooler. Grease build-up on fire suppression system in venthood system. Roaches in kitchen area.

Violations: Not cooling potatoes properly. Not using proper cooling methods. Bowls, pans, cups and pots not stored inverted. No Splash guard on hand sink on three-compartment sink side.

Violations: No hand sink in back dishwashing area. No backflow at three-compartment sink.
· Alcovy High School, 91-A, 14567 Ga. Highway 36, Covington. Date: April 1
Violations: Not hot holding food properly.
· KFC, 96-A, 6103 U.S. Highway 278, Covington. Date: April 2
Violations: Single-door freezer leaking inside at top. Faucet leaking at vegetable sink. Grout missing around floor drains.
· Cousins Middle School, 82-B, 8187 Carlton Trail, Covington. Date: April 2
Violations: Sanitizer in buckets weak. Mold inside of ice machine at top. Not cold holding food properly in walk-in cooler. No documentation to show how long food was out of temperature. Chemicals (bleach and stainless steel polish) stored next to utensils. Handles of scoops stored down in sugar and flour.

Violations: Rodent bait station uncovered.
· Stevie B's, 56-U, 3105 U.S. Highway 278, Covington. Date: April 3
Violations: Employee not washing hands between handling dirty dishes then clean dishes. Employee touching cooked pizza with bare hands while cutting. No hand washing sink in back area at dishwashing unit. Can opener blade dirty, slicer dirty, ice machine inside dirty. Food not being cold held properly. Not cooling marinara and noodles properly. Sanitizer buckets not labeled. Improper strength of sanitizer bleach in bucket. Sanitizer stored next to food at storage rack. Not labeling bulk storage containers with common, recognizable names of food. No splash guard at hand sink next to pizza dough area. Coffee filters stored next to air gap plumbing at Coke machine and sugar container. Employees wearing watches and bracelets. Wet wiping cloths out on counters. Employees washing pizza pans out in vegetable sink. Using cups, plates as scoops in flour and sugar. Utensils (plates, pans) stored wet - must air dry utensils before stacking to prevent wet nesting. Dishwasher and drain board not sealed to wall. Vegetable sink not attached to wall or sealed to wall. Wet mops stored in buckets. Vent-a-Hood dirty. Dirty under cold hold bar at buffet line. Outside of dishwasher dirty. Can opener dirty. Drain tubes of Coke machine moldy. Coke machine drain lines moldy under cabinet. Dusty ice machine cover. No backflow prevention on drain lines of Coke machine and too many lines going in to drain. Dirty around Dumpster. No drain plug in Dumpster. Not covering Dumpster. Dirty around dough table. Missing cove molding in miscellaneous areas.
